Chefs create amazing dishes from Smart Price ingredients

Asda Chef Mark and his team recently set themselves a challenge to create amazing dishes using only Smart Price ingredients.

Asda Smart Price challenge

This feast (above) shows you don’t have to spend a fortune to create food that looks – and tastes – delicious.

The team catered for 1300 senior managers at an Asda event and came up with a four-course menu that wouldn’t look out of place at a top restaurant. They only revealed it was made with Smart Price ingredient after the final plate was cleared! We asked Mark to talk us through the menu:

Starter: Roast Red Pepper Soup with Roasted Garlic Oil and Feta Crouton

Soup is a great option when you’re on a budget. Roasting the red peppers first gives the soup a nice rich flavour. We also used chopped tomatoes – one of my favourite Smart Price ingredients – Smart Price carrots, Smart Price onions, garlic, rapeseed oil and a pinch of dried chilli.

Normandy Chicken and Parsnip and Potato Mash with Roasted Apples

Main course

I love Smart Price butter and so we seared the chicken breasts then rubbed in a bit of butter before cooking them in a hot oven. The chicken is good quality but you don’t always get the same-sized chicken breasts in a Smart Price pack which is why we’ve chopped them into pieces. We used Smart Price cider and Smart Price apple juice to create a classic Normandy sauce.

Two Cheese Pate with Crackers

Cheese and biscuits

We used Smart Price Mature Cheddar, butter and creme fraiche to make the pate and flavoured it with chives, Tabasco, Worcester sauce and seasoning.

Poached Pear with Soaked Madeira Cake and Vanilla Cream

For dessert we made a syrup using sugar, water, dark rum, orange zest, vanilla essence and star anise. We poured it over the Smart Price Madeira cake and let it soak, then added Chantilly cream and Orange confit.
