Bourbon ribs inspired by Memphis trip

These finger-lickin’ Butcher’s Selection Bourbon Pork Ribs are the best we’ve ever cooked up! They were inspired by a trip to the US when some of our meat team visited Dallas, Memphis and Kansas City to see first-hand the trend for ribshack-style BBQ food.

Here are the final results from the World BBQ Championships in Memphis…

Friday results

Seafood category: Our lobster dogs came 26th out of 102 entries

Beef category: Our beef rib-eye with a British beer glaze came 65th out of 105

Exotic category: Our boneless lamb shoulder with a chimichuri dressing placed 60 out of 78. (lamb is not a commonly eaten meat in the states – other people in this category were cooking rattle snakes and even racoons!)

Saturday results

Saturday was the big day. As they say over there it is “all about the pig!”. On Saturday there was completion for the “whole hog” (whole pig), pork shoulder and pork ribs. We entered in the rib category a version of our ASDA butchers selection sweet BBQ pork rib rack.

London Underground worker Robert Reid surfaced yesterday at ASDA’s Old Kent Road store in South East London to pick up the keys for his brand-new Ford Fiesta – handed to him by General Store Manager Michael Haynes.

Asda and Feasters give away another car

Robert, 43, from Camberwell, won the gleaming new car after picking up a Feasters microwaveable burger from the store where he does his weekly shop.

He saw the promotion, which is exclusive to ASDA shoppers, on the Feasters wrapper and decided to give it a go, having sold his old car when he was out of work for four months last winter.

Robert said: “It’s still hard to believe that I’ve won the car. I love Feasters and I buy one for each day at work. I’m so glad I entered, but I never really thought I’d win!”

What an adrenaline filled day we have had so far in Memphis. Today has been the first day of judging for us and we had 3 dishes to get out within half an hour of each other; lobster dog, chimichurri lamb shoulder and the amazing rib-eye basted in a beer glaze.

The team have worked together brilliantly today and in the end we were really proud of what we sent for judging. At the time of writing this blog we have no idea what the judges thought so we will get back soon and let you know.

Hopefully in the video you can see it was like working in a top world restaurant with the stress and care taken by our chefs – not only to deliver fantastically tasty food but also to get the presentation perfect. To be frank, the fast food style presentation using the white cardboard boxes which the competition requires really doesn’t justify how good these dishes actually looked and tasted.

After the walk to the judges tent it was a welcome break to relax after such a hot day and we also bumped in to former World BBQ champion, Jim Bolan.
